Punch hat derives from

I think this is called hot linking. Nevertheless this is the hat of a Russian Grenadier, 1731 to 1756.

Why I found this image is a long story that involves cockades and how to make them. But I am satisfied that this is the style of hat Piccini's Punch wears. The often mentioned sugar loaf is a completely different sort of hat that looks nothing like the one any Punch has ever worn.
But of course this little detail may be of interest to no other than myself.

I've seen pictures of British grenadiers wearing similar hats

Not really the same Trev. The ones you mention are mitre hats - based on the bishops's mitre shape, which is quite different to the one Chris found which is a variation of the sugar loaf hat with an extended and erect brim - and does look very much like the Cruikshank drawings.
(but don't tell Chris about the sugarloaf bit)
